Cesare was born into a farming family, a grandfather supplied the inhabitants of nearby Tione di Trento every morning with fresh milk, while the family devoted itself to animal husbandry and fruit growing. A key turning point however was the decision of his father and uncles to implement an ambitious recovery project restoring an area historically used for viticulture. An area somewhat abandoned due to the post-war waves of migration. The planting of a new world style vineyard and winery began.
During his high school years he spent his free time helping in the vineyard with an ever increasing commitment, while at university the seed of opening his own sparkling wine house germinated fully. Over time he better understood that the grapes produced and kissed by the sun in such a generous territory are a rare and precious thing and must be reserved for high-level production of which the LEVII Classic Method sparkling wine is an expression of such excellence.
In 2012 Cesare acquired the family vineyards and began the sparkling process of his grapes, founding the Maison LEVII. The intention is to bring the qualitative excellence of LEVII sparkling wines to the world, sharing the territory and ultimately obtain effects that go beyond the company itself, positively impacting the local socio-economic context.
The LEVII brand translates into Le Vigne and identifies the passion for Viticulture. It derives from the historical placename of the vineyards extraordinary location and expresses the link with the Territory. Finally, the B embroidered in gold in the center stands for Berasi and guarantees Commitment and Attention to quality. Cesare Berasi is personally committed to ensuring that every single aspect of the supply chain is taken care of to the finest detail guaranteeing excellence.
LEVII directly cultivates 15 hectares of vineyards at the foot of the Brenta Dolomites on the territories of Stenico and Bleggio in the Giudicarie.
They are located between 650 and 750 meters above sea level on high slopes with an optimal southern exposure. The training system is Guyot with inter-row distances of 70 cm, inter-row of 2 meters and a density of more than 7,000 plants per hectare. Everything is designed to obtain the highest quality.
Attention is paid to the cultivation of Chardonnay and Pinot Nero, the main grapes for the production of Trento Doc classic method sparkling wines.
Thanks to the particular agro-climatic conditions of our valley, these varieties are able to reach very high and suitable organoleptic-qualitative levels for the production of excellence.
Love for the territory both as a precious generator of the best base grapes but also as a social system in which ones actions must have common positive effects.
At high altitudes almost every activity is difficult, complicated and extreme but the qualitative results are unmatched. The agricultural product is enhanced, improving aromas and the pure elegance of flavors.
Time and quality are inextricably linked. The best sparkling wines are produced "without haste" to guarantee the time necessary for their continueing improvement and refinement during aging.
